Often times in commercial litigation cases in the US, the judge will order a pre-judgment interest rate per the plaintiff’s request (as a settlement incentive) or order a post-judgement interest rate based off the WSJ Money Rates, is it haram to be on cases like these?

As longer as you are not making the request for such order, or try to enforce the order itself, then it should be fine. But working as a lawyer in general in a non muslim country can have many challenges.
