Before I converted to Islam
I went to university and I also had some credit cards. They both have interest and I am still paying them back. I worry every day that I need to pay them back but I don’t have enough to pay it all back in one go.
What can I do? Are there any halal options? How do I get out of this quickly.

You took out the credit cards before converting to Islam, so you are not sinful for this.
You should not default on this debt either, try to repay it as soon as possible within the limit of what you can afford to repay overtime.
